Rachel and Leona: Barista Intermediate Learning in Bangkok

Rachel and Leona travelled from the Philippines to join our English-language SCA Barista Intermediate learning in Bangkok. Our June 2022 first-day album follows their introduction to coffee through to practical work at the espresso machine.

Live roasting demonstrations showed light, medium and dark roast levels before the lesson moved behind the bar. Exploring the machine, espresso basics and menu preparation established the starting point for the day’s work.

The class then moved into advanced espresso and milk techniques. The original photograph captures extraction into a cup, with the machine display recording another part of what happens during preparation.

An earlier account shared in May adds a learner’s perspective. Rachel Lobangco described her first day with her daughter, Leona Lobangco, and their learning with the Academy teaching team. Her account and our classroom album preserve different views of the learning experience.

In her day-two account, Rachel described exploring coffee history, mathematics, science and sensory with Natt Muangsiri. The school shared her view of the private-group learning, adding another perspective on the subjects connecting the practical work.

Thank you, Rachel and Leona, for making the journey to learn with us. Browse the original first-day album and Rachel’s account below for more from the classroom.
