On 7 October 2017, Espresso Academy reported a V60 brewing test led by trainer Simone Celli. The team used one coffee, a Panama Finca la Esmeralda from Palmyra Estate roasted by Caffelab, and compared four water setups.

The report gives a recipe of 15 grams of coffee to 250 grams of water, with extraction times between 2:00 and 2:30. The waters were Levissima bottled water, Vera bottled water, tap water, and tap water passed through a BWT magnesium filter.

Espresso Academy described the Levissima cup as balanced and sweet, the Vera cup as empty and dry, and the filtered tap-water cup as sweet. The report described the unfiltered tap-water cup as more bitter and suggested chlorine as a possible explanation.

The contrast between these cups offers a useful starting point for exploring water in brewing. These tasting notes describe this particular comparison, rather than a result to expect from every coffee or water supply.
