Learning to Taste Coffee in Florence: The Early Studies Behind Anaya

Flavour references, aroma vials and handwritten tasting notes from the original Florence learning album.

Day Uno begins with attention: noticing aroma and flavour before reaching for the right words. The Anaya album shared on 2 November 2016 describes sensory learning in Florence, including Brazilian cupping and the challenge of explaining a personal impression objectively.

That is a useful starting point for coffee study. First smell, taste and compare; then find language that another person can understand. Natt later recalled studying several coffee subjects at Espresso Academy in Florence before opening Anaya. The album gives us a glimpse of that learning journey, but it does not establish the date of the lesson, a particular instructor or any qualification awarded.
