Junior Vargas Otero Joins Our SCA Roasting Professional Class

We were honoured to welcome Junior Vargas Otero to our SCA Roasting Skills Professional class at Espresso Academic Thailand. Our March 2025 classroom update celebrated the chance to work with Austria’s Barista Champion and a 2022 World Barista Championship competitor.

The course explored the chemistry and physics of roasting, analysis of green coffee properties, profile development and roast control. Sensory evaluation connected that work with the results in the cup, alongside discussion of roastery management and business operations.

The original photographs offer a closer look at the roasting equipment, coffee samples and analysis tools used in the learning setting. Comparing the material before and after roasting was part of this deeper examination of coffee.
